The Hidden Sugar in Processed Food

Last night Maori TV showed the Australian documentary That Sugar Film. So far it’s the best documentary I have seen about the western world’s sugar addiction and the 50 years of fake science (sponsored by the food industry) resulting in the cult of the “low fat diet.” Sadly the low fat diet – the major culprit in our current global epidemic of obesity, diabetes, heart disease and cancer – continues to be promoted by many western doctors and public health officials.

The film starts by tracing the original domestication of sugar in New Guinea. From New Guinea sugar cultivation traveled to India, which would be colonized by the British in the 1600s. During the 17th century, sugar was a status symbol for royalty.

Sugar consumption in western society was fairly moderate until 1955, when President Eisenhower’s heart attack highlighted the growing incidence of heart disease. Battle lines were drawn in the scientific community between the American Ancel Keys, who blamed increasing heart disease on fat, and British scientist John Yudkin, who blamed it on sugar. Thanks to a small fortune the food industry spent on studies demonizing fat and lionizing sugar (and major donations they made to US politicians and advocacy groups such as the American Heart Association), by the 1970s Keys had won out and the cult of the low fat diet was institutionalized.

Despite the total absence of independent research, doctors, dieticians and public health officials persuaded millions of patients to eliminate fat from their diets. Owing to shocking levels of sugar in processed foods, the vast majority inadvertently replaced the fat with sugar.

Australian filmmaker Damon Gameau replicates this process through an experiment in which he replaces the fats in his diet with supposedly “healthy” processed foods such as low fat yogurt, muesli (granola), fruit juice and smoothies and beans on toast (a favorite comfort food in Australia and New Zealand). The conditions of his new diet are that he must consume 40 teaspoons of sugar a day without eating any candy, deserts or junk food.

His doctor monitors him very closely throughout the experiment. In less than a month he has put on significant weight (without increasing his caloric intake) and is showing signs of liver damage. He is also experiencing major mood swings and bursts of hyperactivity similar to children with ADHD.

In the ten years since British journalist Jacky Law published Big Pharma, the only good news is growing public awareness of the drug industry’s negative effect on human health. There’s no question the wealth and power of the pharmaceutical industry has vastly increased with the enactment of Obamacare in 2010. The latter grants major federal subsidies to both the insurance and drug industry.

Law carefully unpacks the fundamentals that position Big Pharma’s profits at the very top of Fortune 500 companies. In 2001, for example, they were number one, earning profits equal to 16-18% of sales. The banking industry was a distance second at 13.5%. While other Fortune 500 companies averaged 3.3%.

She attributes these obscene profits mainly to inflated prices Big Pharma charges Americans (as much as 5-10 times as much as in other countries), their deliberate efforts to bury and/or spin negative research, their bribing of doctors (with gifts, free lunch, training junkets and consultant fees) and medical journals (with glossy high priced ads), the refusal of the FDA to regulate pharmaceuticals (see FDA Now Completely Sold Out to Big Pharma) and direct to consumer ads aimed at convincing healthy people they need medical attention.

She devotes a whole chapter to “disease mongering,” Big Pharma’s deliberate creation of fictitious illnesses such as menopause, serotonin deficiency, post luteal dysphoric disorder and female sexual desire disorder. She also details studies dating back to 1982 revealing that low fat diets don’t decrease cardiovascular disease, as well as studies from 1992 revealing that cholesterol lowering drugs (statins) don’t reduce mortality. Thanks to the deliberate harassment and demonization of the researchers responsible for these studies, this information has only come into public view in the last two years. Law is also highly critical of the role the pharmaceutical industry has played in minimizing the importance of poor nutrition and exposure to toxic chemicals in causing illness. She finds it extremely ironic (and immoral) that the federal government is clamping down on health supplements instead of environmental toxins.

In brief, Origins is a film about saving the planet by improving your diet and lifestyle. The filmmakers assert that a healthier diet will enable people to think more clearly about the imminent crises confronting civilization. While I totally disagree with the premise – I don’t believe real change is possible without confronting corporate corruption and growing inequality – I liked the film. It offers the clearest explanation yet of the fundamental role of the microbiome* in human health and the rhizophere** in plant health.

Western medicine, as currently practiced, has become totally obsolete owing to its inability to view the human body as a holistic integrated unit. The end result is that roughly half of us are in really poor health. While I disagree with the premise of the film, I’m willing to concede that many of us aren’t healthy or fit enough to tackle major social or political change.

A secondary premise of the film is that we need to fundamentally rethink the way we use technology – mainly because we’re systematically poisoning ourselves through air pollution and toxic endocrine disruptors that mimic estrogen in our bodies. This heavy estrogen effect is a major factor in an epidemic of breast, prostate and other cancers, as well as infertility, obesity and anxiety/depression.

My favorite part of the documentary concerns the microbiome, which turns out to be primary source of our immunity. Owing to the overuse of antibiotics in medicine and agriculture (in livestock feed), most of us have experienced a mass extinction of our intestinal bacteria. This, in turn, plays an even bigger role than toxic chemicals in diseases triggered by inflammation, such as obesity, cancer, type 2 diabetes, heart disease and autoimmune illnesses.

Origins goes on to stress the importance of vaginal birth and breast feeding in establishing a healthy microbiome in infants and the avoidance of antibiotics, antibiotic soaps and commercial household cleaners and toxic chemicals in keeping it that way. Letting kids play in the dirt is another important source of beneficial bacteria. As are are fermented foods and fresh (unprocessed) chemical free foods.

I was also pleased to see the filmmakers brutally debunk the low fat, high sugar, high carbohydrate diet*** Food Inc and western medicine have been trying to sell us for the last fifty years. This is the number one reason half of Americans suffer from “diabesity” (aka metabolic syndrome), even though many of them may not realize it yet.

To their credit, thousands of doctors (according to filmmakers) are taking their patients off GMO foods, resulting in rapid relief of allergies, chronic illnesses and infertility.

I was also pleased to see the comparison filmmakers make between the soil rhizosphere and the gut microbiome. While we’ve been destroying our intestinal bacteria with antibiotics, Food Inc has been systematically destroying essential soil bacteria with pesticides, herbicides and GMOs.

Citing a recent UN study, Origins explodes the myth that GMO technology is the only solution to world hunger. According to the UN, we could double current crop yields in ten years simply by switching to organic farming methods that restore the health and integrity of our soil.

Ignore the background music (I hate documentaries with soppy background music). It’s worth putting up with for the excellent section on diet.


* Microbiome, as defined in this film, refers to the millions of intestinal bacteria that are essential to healthy digestion and immunity.

** The rhizosphere is the narrow region of soil that is directly influenced by root secretions and associated soil microorganisms.
